For a long time, the artichoke, a plant in the thistle family, was accessible only to the wealthy due to its high price. In addition to its main active ingredient, cynarin, it also contains flavonoids, tannic acids, inulin (a starch that contains carbohydrates), mucilages, enzymes (cynarase), vitamins (beta-carotene = provitamin A, niacin, vitamin C), minerals (potassium, calcium, magnesium, phosphorus, and iron), and more. Only 20% of the artichoke is edible (the lower part of the leaves and the base of the flower (heart)). The extract is mainly used to combat liver and gallbladder disorders and in cases of poor digestion. It improves liver function (improving cell formation); in alcoholics, it reduces liver swelling. It improves fat metabolism, which leads to the elimination of higher amounts of cholesterol (a problem many people face nowadays!). It also stimulates protein production in the body. For those with gout, the detoxifying effect of the drink reduces urea levels.
