What is cholesterol?
To perform various functions, the body needs approximately 0.5–1 g of cholesterol per day. About 90% of this amount can be produced by the body itself. The remaining portion is absorbed from food. Cholesterol levels increase primarily due to the consumption of fatty animal-based foods containing saturated fatty acids, such as butter, dairy products, and meat. It is important to remember that when a large amount of cholesterol is absorbed from food, its production in the liver slows down.
Not all cholesterol is the same
Cholesterol does not dissolve in water. For cholesterol to be transported in the blood, certain water-soluble proteins are needed as carriers – lipoproteins. However, these proteins transport not only cholesterol but also fatty acids, phospholipids, and fat-soluble vitamins.
Based on the protein and fat content, lipoproteins are divided into three groups of different density.
Note: the higher the lipid (fat) content, the more harmful it is to health:
- HDL – high-density lipoproteins, also known as good cholesterol, have high density but low lipid content;
- LDL – low-density lipoproteins, also known as bad cholesterol, have low density but high lipid content;
- VLDL – very low-density lipoproteins, precursors to LDL.
When talking about cholesterol, we generally refer to total cholesterol, which consists of HDL, LDL, and VLDL lipoproteins. When measuring cholesterol levels in the blood, the ratio of HDL and LDL cholesterol is accurately determined, and the level of LDL cholesterol should be as low as possible.
LDL, "bad" cholesterol
If the level of LDL cholesterol in the blood is too high, it settles on the walls of blood vessels. The higher the level of bad LDL or VLDL cholesterol in the blood, the more it accumulates on the vessel walls.
HDL, "good" cholesterol
HDL cholesterol is called "good" because it is capable of absorbing accumulated cholesterol and transporting it back to the liver. In this way, HDL cholesterol ensures a balance between cholesterol production in the liver and returning excess cholesterol to the liver, preventing deposits in blood vessels. For this reason, an ideal state is having a normal total cholesterol level in the blood with the highest possible proportion of HDL cholesterol and the lowest possible proportion of LDL and VLDL cholesterol.

FERMENTED RED RICE
Fermented red rice or red yeast rice is a traditional Chinese preparation of cooked white rice, fermented by the Monascus purpureus mold. During fermentation, many substances are produced that are responsible for the intense red color. Dried and ground rice is called red rice flour.
